Naan Recipe- homestyle

As Salaamu Alaikum All,

Ok the key ingredient in this bread besides the flour... It's YEAST!!! and If you ever worked with yeast it has a temper... if the water is nice an warm she will frost up and if it's not she'll turn to an ivory cream... YUKKY...

When I first made this bread I remember calling my mother and told her "Umi something funky is happening to my yeast it's bubbling up..."   I swore a monster like alien was going to pop out of it... LOL

I was about the throw it out and my mother Laughed and  said  oh no...It's good... the yeast is good when it bubbles up"

(May Allah have mercy on her and Grant Umi paradise.. inshAllah)

Mom moment- She was an Awesome mum, a strong believer  ( unlike me... she never got caught up in all this new fangle Islam, sect, groups, like and dislike...). She kept to herself and her home was always open to muslims, and Children. Omgosh I remember she used to bring her  students home or take them out... Awesome teacher... esp if children ( teenagers) where hitting hard time or she wanted to keep them off  the street. She would have them over... set up going out time and so forth. My sister and I went along for the ride... LOL. Parents used to come up and say "Ms. Abdul or Sis Nurah- I don't know what you did to my child but they he or she changed... wanting to learn..."

Her student at first would test her but then fell in love with her... Any where she went you'd her a voice ' Sister Nurah Sister Nurah or Ms. Abdul Ms. Abdul... "

MashAllah I'm sorry to go on about her... But I wish I WISH you all met her... She was an UMI from Allah (SWT)... and as its state the Good always die young... My mom passed as soon as she retired from teaching... Ok enough of that... I'm getting the lump in my throat...

Back to the Naan...(Home style- different from the resturant.. I guess because like anything homemade.. time and love is put into it...)

1 cup of warm water, 1.2 tsp or 1 packet of yeast

3 tlb. milk

4 tbl. sugar

2 tsp salt

1 egg

4 cups of flour

pour yeast in a cup of warm water...( if you want a pinch of salt)  and stir in cup. set in a warm place and watch for it to frost up.  In a bowl add the egg, milk, sugar and tsp of salt.. Mix ( if should look like a light to golen yellow with sparkles in it).

place the flour in a big bowl.. Add the yeast (once frosted)  and yellow mixture to the bowl and mix together until no more flour is in the bowl.  Form the dough into a ball.  Remove it from the bowl and knead it out on a counter... Form into a nice smooth ball- wipe oil around it . Place back in bowl and cover with a damp cloth. Wait till it rise . Appox. an hour - I like to keep in longer...like an extra 30 minutes... Now the dough should be nice and smooth like soft silk and glowing ecru complexion- LOVE it...

Take it out of the bowl and piece the dough in balls... and place them on a cookie sheet... cover again with the damp cloth...

Heat the griddle or Tawa on stove... Now to cook this bread there's various ways... some oil the pan and other spread the ghee, oil or butter on the dough...

I roll the dough out and spread the ghee on it ( sometimes I use Veggie butter flavor shortening... nice butter sweet taste)  on the dough- Old school trini style in making Roti...

Place on the pan and watch it... when the bottom turn a light golden color flip it over... once it's cooked well place the bread in cloth bowl and cover....

I know it seem like a lot to make the bread... but I'm telling you guys its awesome in taste and extremely fun to make... the dough can be use to make pretzels ( as my nephew informed me the naan taste like Aunty Ann's preztel) or it can be deep fried and made into doughnuts.

Ok you try it and let me know how it goes... in questions on this dish... hit me up

Ma Salaama
