Cresent Moon & Star symbols are not from Islam (Qur'an & way of th Prophet)
As salaamu alaykum, The Messenger of Allah had a black flag and a white flag with not cresent or star symbols.
"The crescent moon and star symbol actually pre-dates Islam by several thousand years. Information on the origins of the symbol are difficult to ascertain, but most sources agree that these ancient celestial symbols were in use by the peoples of Central Asia and Siberia in their worship of sun, moon, and sky gods." There are also reports that the crescent moon and star were used to represent the Carthaginian goddess Tanit or the Greek goddess Diana.
"The city of Byzantium (later known as Constantinople and Istanbul) adopted the crescent moon as its symbol. According to some reports, they chose it in honor of the goddess Diana. Others indicate that it dates back to a battle in which the Romans defeated the Goths on the first day of a lunar month. In any event, the crescent moon was featured on the city's flag even before the birth of Christ."
This is clear innovation, jahilliyah. But some will keep using these symbols even after they find out clear evidence that this practice was used by pagans and adopted by the Ottomans centuries after Qur'an was revealed.

During the time of the Prophet Muhammad (peace be upon him), Islamic armies and caravans flew simple solid-colored flags (generally black, green, or white) for identification purposes. In later generations, the Muslim leaders continued to use a simple black, white, or green flag with no markings, writing, or symbolism on it."

As salaamu alaykum, Allah does not say the moon and star are symbols for the Muslims. Allah says the Moon is for counting time (month by month / years) and fixed periods, and pilgrimage.
Qur'an 10:5. It is He Who made the sun to be a shining glory and the moon to be a light (of beauty), and measured out stages for her; that ye might know the number of years and the count (of time). Nowise did Allah create this but in truth and righteousness. (Thus) doth He explain His Signs in detail, for those who understand.
Qur'an 2:189. They ask thee concerning the New Moons. Say: They are but signs to mark fixed periods of time in (the affairs of) men, and for Pilgrimage. It is no virtue if ye enter your houses from the back: It is virtue if ye fear Allah. Enter houses through the proper doors: And fear Allah. That ye may prosper.
Qur'an 2:185. Ramadhan is the (month) in which was sent down the Qur'an, as a guide to mankind, also clear (Signs) for guidance and judgment (Between right and wrong). So every one of you who is present (at his home) during that month should spend it in fasting, but if any one is ill, or on a journey, the prescribed period (Should be made up) by days later. Allah intends every facility for you; He does not want to put to difficulties. (He wants you) to complete the prescribed period, and to glorify Him in that He has guided you; and perchance ye shall be grateful.
